Salmonella is a Gram-negative bacteria, and the avidin is like a protecting mechanism against all Gram-negative and some Gram-positive bacteria. So the yolk is quite safe in there.

Although this probably isn't relevant when the chicken itself was infected with salmonella for example.

Yes, egg white is comparable to the human womb (both protecting the embryo); both contain avidin and ovomucoid (ovomucoid inhibits trypsin activity)
In the human womb, ovaries and oviduct, progesterone stimulates production of avidin, and estrogen stimulates production of ovomucoid.
