I find raw brain tasty; I really enjoy it.
I was afraid I was going to be the only person to actually gain weight while in ketosis.
Many have put on weight - me included - while being keto adapted (ketonemia, not ketonuria) by eating an all-meat diet.

If you create a calorie surplus, excessive dietary fat and protein will be stored as energy (body fat). Atkin´s followers propagated that myth, debunked both by empirical evidence (low carb forum testimonies) and metabolic ward studies.

I guess raw brain should be fine.

Excess calories will all be converted into body fat, carbs, fat, and protein alike.

Ketosis: Ya, that would be kind of too good to be true... stuffing your face limitlessly and not gaining weight hahaha. Ya right.

O I just saw Oscar's reply... really? would that be ok? Is it mainly fat? Can you get organic brain? What kind of brain?

According to the USDA beef brain has 76% water, 10% protein, and 10% fat. 3% is cholesterol. I've never really looked into it, so I don't have more info. :?

The protein quality of ox-brain-protein is a bit low; 30% (beef, muscles only is 38%, egg yolks 44%, salmon 45%).
Ox brain is also a bit salty; 167 mg sodium / 100 g. (salmon 51 mg, beef 66 mg, egg yolks 51 mg)
